SUPER Lowcarb-glutenfree Spinach Crackers!

As I lovingly crafted this recipe, inspired by the laughter and camaraderie shared with my friend, I uncovered a treasure trove of flavor and nourishment. These crackers, born from just three simple ingredients, boast a bounty of protein and vibrant veggies, promising not only to tantalize your taste buds but also to keep you and your little ones happily satisfied for hours on end. With each crunchy bite, may you find a sprinkle of magic and a reminder of the boundless love that goes into every homemade creation! 👏

INGREDIENTS
▫1.5 cups blanched fine almond flour
▫large handful of baby spinach
▫1 egg
▫pinch salt

METHOD
👩‍🍳preheat oven to 350F

👩‍🍳Blend spinach and egg until smooth, if needed add a small splash of water to help blend. – just a splash, you don’t want it too wet!

👩‍🍳 Start by combining all the ingredients in a spacious bowl. If you need visual guidance, check out the video above. Once your dough is ready, transfer it onto a silicone baking mat (trust me, silicone works wonders to prevent sticking), cover it with parchment paper, and gently roll it out to about 1/8 inch thickness.

👩‍🍳 Now, it’s time to get creative with your shapes! I personally find that using a pizza cutter yields clean, precise lines, but feel free to let your imagination run wild.

👩‍🍳 Pop your creations into a preheated oven set at 350°F for roughly 15 minutes. Keep an eye on them—when the edges start to turn a golden hue, they’re ready to be savored! If you prefer a crispier texture, consider removing any thinly edged pieces a bit earlier and giving the rest an extra minute or two in the oven. Trust me, every crunchy bite will be worth the wait!

chili crisp eggs 🍳this homemade chili crunch oil is a fun and yummy way to level up fried eggs, toasts, sandwiches, noodles and more🔥

✨recipe summary:
🌶for the chili crisp oil (or use your fave premade)
✨heat 1/2 cup avocado oil or neutral oil of choice in a pot over low heat
✨combine: 1 tbsp crushed chili flakes or crushed red pepper
▫1 tbsp finely ground chili powder (Sichuan chili powder, Korean red chili powder/gochugaru or chili powder of choice)
▫1/8 tsp five spice powder
▫1/2 tbsp finely minced or grated garlic
▫1/2 tsp sesame seeds
▫1/4 tsp salt
✨pour hot oil over seasonings + let sizzle. stir.

✨spoon in 2-3 tsp chili crisp oil to a nonstick pan, crack in 1 egg + season with salt + black pepper + fry until edges are crispy or cooked to your liking.

✨serve fried egg with your fave sides or over toasted gluten-free (or preferred) sourdough bread (we like bread srsly, awg bakery, grain-free planet or base culture) + dairy-free butter or df cream cheese (Miyokos, Violife or Kite-Hill) + a little bit of baby spinach (or arugula) + 1/3 small sliced avocado + top egg with more chili oil + fresh chopped basil or herbs of choice

Quick and Easy Air Fryer Frittata 🥦🧀🥚
(Another viral recipe that I had to try)

If you want a delicious and healthy breakfast, look no further! This simple frittata is packed with protein and veggies, and is the perfect way to start your day.

A twist on the classic frittata, this recipe is very customisable and a fantastic way to use up leftover food.

You can serve it for breakfast, even for brunch or a light lunch with a side salad.

Ingredients:

-4 large eggs
-1 teaspoon extra virgin olive oil
-broccoli florets
-2 spring onions, finely chopped
-1/2 bell pepper, finely chopped
-grated cheese (I used mozarella and Red Fox Cheese)
-salt and pepper
-fresh parsley

Instructions:

1. Preheat the air fryer to 180 C.
2. Line the basket with parchment paper and add extra virgin olive oil.
3. Crack the eggs directly on top, season with salt and pepper and add all the toppings. Top with grated cheese.
4. Cook for 12-15 minutes, start checking to see if it is done after 12 minutes, as all air fryer models vary.
5. Allow to cool for 2-3 minutes before releasing it from the tin. Add some fresh parsley, slice it and serve. Enjoy!

McChicken Sandwich 🥵

High-protein McChicken sandwich fakeaway which has nearly triple the amount of protein compared to the maccy’s version and tastes like the real deal! 👌

Fakeaway = 44g protein ✅

Macros
409 calories

Serves: 1

Shopping list ✍
– 1 chicken breast
– 15g crushed cornflakes
– 1/2 tsp paprika
– Salt & pepper
– 1 egg white
– 1 Brioche Bun
– 2 tbsp light mayo
– Low calorie spray
– Iceberg lettuce, sliced

Method
Tenderise the chicken breast then season with salt, pepper and paprika. Dip into the whisked egg then the cornflakes. Spray with low calorie spray and air fry on 200C for 7 mins, flip, spray with more spray and cook for a further 7 mins or until cooks through. Spread over mayo on the brioche, then place the iceberg lettuce on top then the chicken and enjoy!

Ingredients:
-Yogurt Mixture-
1/2 cup greek yogurt
2 tbsp peanut butta
Drizzle of honey
1/2 scoop protein
1 tbsp chocolate chips
-Chocolate Shell-
1/2 cup chocolate chips
1/2 tsp coconut oil



Instructions:
1) Combine all of the yogurt mixture ingredients.
2) Mix and scoop onto wax paper.
3) Add popsicle sticks. (optional)
4) Freeze for 1 hour. (until solid)
5) Add the remaining chocolate chips and coconut oil into a bowl, and microwave until melted. (20 second intervals)
6) Dip the yogurt clusters into the melted chocolate.
7) Let the chocolate harden in the freezer for 5 min.
8) Enjoy 🙂

✨🍎Apple Rings🍎✨

My current fixation has been honeycrisp apples with peanut butter- I have been eating them every single day for at least two months😂 For my healthy snack series, I wanted to enjoy them in a more fun way, so I made them into these apple rings (apple “donuts”??? I wasn’t sure what to call these😂) With the dark chocolate and crunchy peanuts to top, they’re even better than my usual go-to🤤🤤

✨Ingredients
2 honeycrisp apples
creamy natural peanut butter
crushed peanuts
melted dark chocolate

✨Directions
I used a sharp vegetable peeler to core the apples, then slices horizonally.

Add creamy pb to each slice, top with peanuts, and drizzle with melted dark chocolate.

You can refrigerate them until the chocolate hardens, or just enjoy right away!

MANGO & WHITE CHOC YOGURT BITES 🥭 with love @caityviant

These are so good!! If you haven’t tried them yet you are missing out – You can use any fruit or flavour of yogurt you like 🤍

Ingredients: (makes 8)
– 2 x mangos
– 320g yopro vanilla
– 50g milkyway bar

Recipe:
– Dice your mango into small pieces & combine with yogurt in a bowl
– Spoon your mixture onto tray/ plate lined with baking paper
– Pop in the freezer for a few hours (minimum 2) or until set
– Melt your choc with love pouring hot water over it or in the microwave
– Cut a snip off the corner and drizzle over your yogurt bites
– Enjoy! 🫶🏼
