COCOIFY ORANGE MUFFINS
Ingredients:
130 g of gluten-free flour or your preferred type (the healthier, the better)
1 tsp of baking powder
2 or 3 tbsp of Monkfruit or your preferred sugar
1 egg
2 tbsp of Cocoify
40 g of unsweetened natural yogurt, with or without sugar, it’s up to you
50 ml of orange juice (I used the juice from the oranges I grated)
Grated orange zest to your liking (YES, even though I said lemon, it’s orange, excuse me, it’s just habit

]]>Quick and Easy Air Fryer Frittata 


(Another viral recipe that I had to try)
If you want a delicious and healthy breakfast, look no further! This simple frittata is packed with protein and veggies, and is the perfect way to start your day.
A twist on the classic frittata, this recipe is very customisable and a fantastic way to use up leftover food.
You can serve it for breakfast, even for brunch or a light lunch with a side salad.
Ingredients:
-4 large eggs
-1 teaspoon extra virgin olive oil
-broccoli florets
-2 spring onions, finely chopped
-1/2 bell pepper, finely chopped
-grated cheese (I used mozarella and Red Fox Cheese)
-salt and pepper
-fresh parsley
Instructions:
1. Preheat the air fryer to 180 C.
2. Line the basket with parchment paper and add extra virgin olive oil.
3. Crack the eggs directly on top, season with salt and pepper and add all the toppings. Top with grated cheese.
4. Cook for 12-15 minutes, start checking to see if it is done after 12 minutes, as all air fryer models vary.
5. Allow to cool for 2-3 minutes before releasing it from the tin. Add some fresh parsley, slice it and serve. Enjoy!
