Shakshuka in the morning with a nice loaf of bread and a cup of tea just hits different! You get a boost of happiness for the rest of the day!
Ingredients :
4-5 ripe tomatoes
4-5 garlic cloves
3-4 tbsps olive oil
3 chilies
3 eggs
Salt & pepper to taste
Start by chopping the tomatoes and garlic
Heat up the oil and fry the tomatoes and garlic on high for 4 minutes. Once the tomatoes start to dissolve. Season with salt & pepper and add the chilies. Lower the heat and cover for 5 minutes till the tomatoes are fully cooked. Crack the eggs and cover. Cook on low till the eggs are cooked to your liking
You can scramble the eggs with the tomatoes if you want.
Serve with bread and tea. And enjoy !

Yellow onions have the deepest flavor and are almost inedible while raw, but when applied to heat their flavor and texture changes. This is your all around cooking choice.
White onions have a more crunchy and tangy flavor that works for pasta, stir fry or even salsa.
Sweet onion does have the sweetest flavor and due to the thick layers of onion, it is perfect for broths and especially frying.
Red onion has the most mild flavor. It is best either grilled, because it doesnβt dry out, or consumed raw in things like guacamole, sandwiches and would be the best choice for pickling.
Green onion is used mainly as garnish topping and works best with soups, stir fry and even tacos.

Baked Lemon Pepper Chicken Thighs that come out juicy and tender EVERY TIME! Incredibly easy to make, great to meal prep and get your protein in.

Ingredients:
β’ 5-6 chicken thighs, bone-in (remove skin for less calories)
β’ 1 tsp olive oil
β’ 1 tsp salt, pepper, paprika, onion powder, oregano
β’ 1/2 tsp chili flakes
β’ 1 tsp minced garlic
β’ 1 tsp lemon zest (I used the zest of one large lemon)
β’ juice of one whole lemon

Notes:
β’ Before baking, sprinkle some salt, pepper and lemon zest on top of each thigh
β’ These work well on both airfryers and ovens. Baking times are different but youβll be looking for an internal temperature of 165Β°F
β’ Serve with rice, potatoes, salad, and more! They should come out so flavourful and juicy you wonβt need sauce!
β’ If you have an olive oil spray, you can even give your thighs a final spray on top for a crispier finish. This is optional.

This recipe takes about 15 minutes to prepare.

β Ingredients:
1 large Eggplant, sliced thinly lengthwise 1 pack of Philadelphia cream cheese 2 cloves garlic, minced β
cup of walnuts, finely chopped Salt/Pepper 1 bunch fresh Parsley, finely chopped
1/3 bunch Cilantro
β Cooking process:
β Heat grill pan over medium and drizzle with olive oil.
β Grill eggplants about 1 to 2 minutes on each side. Make sure not to burn the eggplant.
β Put all the ingredients for the filling in a bowl cream cheese, greens, garlic, chopped walnuts and salt.
β Mix together until well blended.
β Evenly spread filling on 1 side of eggplant. Roll eggplant making sure not to squeeze so the filling does not ooze out of the side. Repeat procedure for the rest of the eggplant slices.
